Green Chile Cornbread

You will not find a better cornbread recipe anywhere. Most mixes have very little corn and are mostly flour which is why homemade cornbread always tastes better. Please do yourself a favor and buy a cast iron skillet if you don’t have one. It makes a world of difference in all of your cooking not just cornbread.

Mix Dry Ingredients Together

1/2 Teaspoon Baking Powder
1 Tablespoon Baking Soda
1 Tablespoon Green Chile Dust
2 Tablespoon Cane Sugar
1 Cup Stone Ground White Cornmeal
2 Tablespoon All Purpose Flour

Mix Wet Ingredients Together
2 Eggs
1 Cup Buttermilk
1/4 Cup Canola Oil
1/2 Cup Chopped Green Chilies, (New Mexican, Anaheim or Jalapeno)

Preheat oven to 400
Mix dry ingredients
Mix wet ingredients
Gently stir dry into wet until smooth. Do not over mix.
Add peppers or any solid ingredients (peppers, corn, etc)
Let rest for 5 minutes
Heat a seasoned 10″ cast iron skillet on the stove top
Add 2 tablespoons of canola oil
Pour in the batter
Transfer to the oven for 15 minutes or until firm
Let the cornbread cool slightly before removing from the skillet
