Chaos Theory Gastrique

This is one of those outside the box recipes right here. This is amazing on fried pork belly or finishing pulled pork to give it a touch of sweet and spicy without overpowering the natural essence of PIG. Simple and quick this gastrique is a game changer.

1 cup Apple Juice
4 tablespoons Light Brown Sugar
3 tablespoons Crazy Good Chaos Theory Hot Sauce

Combine all ingredients in the sauce pan.
Reduce by 2/3 over medium heat.
Remove from the heat when large bubbles begin to form. Just before it becomes a syrup.
